I've not seen seedlings for either at any nursery, but I did have great success sprouting them in four inch pots last year and transplanting. I soaked the New Zealand spinach seeds in water containing a small amount of seaweed extract (?)- if my memory is correct- overnight before planting. I've never seed any kind of squash seed that was difficult to germinate direct-seeded. If you can't find transplants, give it another try with growing your own from seed. I usually sprout seeds in mini-greenhouses to help keep the moisture consistent and it seems to help. Also, just in case you haven't tried New Zealand spinach before, it was really a disappointment imo. I've heard that Malabar spinach is better, but haven't tried it yet.
