Well, I broke open the cracked pink container and found it bursting with buried treasure. I called the neighbors over to see my MONSTER SWEET POTATOES. Am I supposed to cure the potatoes for six weeks or can they be eaten right away?

The largest potato on the scale is SIX pounds! Here is the largest of my 25 lbs. of sweet potatoes.

Answer: The tubers can be eaten now or stored and "cured" which will increase the sugar and taste. My granddad was in the business and stored them wooden boxes inside a big cool, dark warehouse. The aroma was very pleasant. At home I would store them in dry peat moss or cedar flakes. The foliage is edible but most folks don't realize that and it isn't commonly done. Would you recommend growing these in a container, or is a raised bed or regular garden also good for sweet potatoes? And how long would you expect from planting the eyes to harvest? I love sweet potatoes!

I have some favorite recipes - dishes I make with them that are great, but I also like to simply bake them and eat them plain. Since they're large they last me a couple of days, and I usually cut them into "medallions" and warm in the microwave to go with my meal. :)
